Our Commitment to Food Safety and Quality Control

Pierre Foods is dedicated to protecting it's customers, while supplying them with the highest quality products that they have grown to love.

Food Safety is not a program but a way of life in our state-of-the-art USDA approved facilities. Our products and processes are carefully designed by degreed food scientists to be the safest and the best.  But before we can produce these products, our trained sanitarians clean and sanitize the processing areas. Our cleaning operations are inspected and approved prior to the start of production by our pre-operational inspectors and USDA.  Our continuing microbiological monitoring program will verify our effectiveness.

Our products are then produced to meet or exceed their rigid standards in our Total Quality Control (TQC) certified plant.  The
TQC certification by the USDA places it among the top ten of inspected meat plants.  The manufacturing processes are conducted under Hazard Analysis Critical Control Point (HACCP) principles and monitoring programs.  HACCP in conjunction with a sophisticated microbiological monitoring program of environmental, equipment, and finished product testing provides the assurance for our customer that they will receive safe, wholesome, high quality products.

Fully cooking our products destroys harmful bacteria and actual flame broiling and searing with a brander gives our charbroiled products a delicious "fresh off the grill" flavor.  Graduated superheated air ranges from 1000 F to 300 F providing superior texture and color.  The products are Individually Quick Frozen (IQF) to lock in flavor and assure shelf life.  All of this ensures a consistent quality product that is sure to satisfy every time.

To be a leader in the industry we cannot rest on our past accomplishments and successes, we must continue to advance and challenge ourselves.  We employ outside consultants on an annual basis to review and challenge our processes and food safety system.  We are also audited by independent auditors and continue to score high marks.
